Sustainable and Organic
On a recent visit to what was referred to as "the rock" I took a little time to visit the Mudbrick Vineyard and Restaurant, Waiheke Island; New Zealand. Situated at the northern end of the Island, Mudbrick has a breath taking outlook over Motuihe Island and back to Auckland city. These gardens are a must see when you come to Waiheke; what a treat. Mudbrick is owned and operated by Nick and Robyn Jones, who began their first plantings in 1992; more widely known for their wines but little known and of greater interest to me is their philosophy of sustainable planting for the restaurant. Aside from high consumption items such as potatoes and onions most produce is grown from seed, nurtured in greenhouses and picked daily to suit the needs of the restaurant. The majority of the produce is free grown behind the restaurant in boxed allotments while a small number of productive boxed gardens feature out front. The main feature garden compliments the period style architecture with structure and form whilst the finely manicured hedges create a sense of grandeur. A spectrum of gardening is achieved beginning with the thought provoking aesthetic feature gardens through to the functional - productive working gardens that continue to evolve as the demands of the restaurant increase.
Composting plays an important role in maintaining the production of the garden and ultimately its sustainability. Like an amplifier is used to boost a weak signal, in a similar way composting works to enhance growth, and through this gain sustainability is achieved. Table waste is placed in composting bins and sprinkled with Bokashi Compost-Zing to begin the putrefaction. The reduced cost of rubbish disposal and the resultant concentrated liquid has significant results. Finally the remaining composted solids are dug into the soil to help restore nutrients.
I noticed a well worn set of garden tools hung from the barn wall as evidence of the effort required in maintaining a garden of this nature. What was also pleasing is that most tools were from the Atlas rangeof which we are agents. The produce from Mudbrick's gardens would be lucky to go someway to covering the cost of materials and labour; but that's not the point! The idea is bigger; its about the overall concept, the bigger picture for the property and the confidence in knowing that what's grown is organic.
